7 of My Favorite Quick Dinners

Last month I shared a blog post with a few of my favorite meals, and it got a huge response! (you can read that blog post here)  I’ve had a few requests to share some of the other recipes that I’ve been posting about on my Instagram stories. So, back by popular demand, here are 7 of my current favorite quick dinners!

This Caprese salad with crispy prosciutto is actually from Chrissy Teigen’s cookbook, Cravings. It was super simple and was ready in like 5 minutes. The longest thing was the prosciutto, which I just stuck in the oven on one my silpat baking mats. The rest of the salad is simple, just arugula, mozarella, tomatoes, and balsamic vinegar.

Seth made this for us just a few nights ago and it was super good! It’s Mozzarella chicken over spaghetti. The recipe has you make your own sauce, but I didn’t feel like going to the effort(although I make a great homemade marinara sauce!) so I just used my favorite jarred sauce.

This prosciutto wrapped stuffed chicken is also from Chrissy’s book! Seth actually got me her cookbook for Christmas and I never used it because I was  pregnant and the thought of cooking made me want to throw up. I pulled it out a few weeks ago and ended up making a handful of her recipes! They’re all super good.

Frito pie is actually something I don’t think I’ve ever eaten before this, but it was such a yummy, quick dinner. It’s essentially chili on top of fritos and then your favorite toppings. Super yummy.

My favorite thing about these fajitas is just that I was able to make them in a sheet pan in the oven. Lots easier to make, and a lot less maintenance. The recipe made a lot, which was great because I brought them to work with me the next day.

This is my last Chrissy recipe, I promise. Haha. It’s her Honey Chipotle chicken with mango salsa, and I served it with rice. It’s a little bit spicy but I thought it was just the perfect amount, and the salsa is a really nice compliment!

I decided to mix it up a little, since we usually eat chicken, and make these brown sugar glazed pork chops! I served them with roasted potatoes and roasted asparagus(which is one of our very favorite side dishes, haha).
